This yellow curry sauce is one of our favorites. It's so easy (basically a southern style gravy with curry powder added in); it's picky-eater friendly because everyone gets to choose their own toppings; and it has sentimental value for us because we served it at our wedding reception.
It's not super spicy with a perfect bit of sweetness from coconut milk or vanilla milk alternative. Did I mention it's so easy and delicious? Because it is.
Vegan Yellow Curry Sauce
serves 2-3 people; easily multiplies for larger groups1 cup uncooked rice
2 TBSP butter or alternative
2 TBSP flour
1/2 tsp. curry powder
1/4 tsp. salt
1/8 tsp. black pepper
1 c. milk or alternative (vanilla or coconut is so good)
How to Make Yellow Curry
1. Start rice cooking according to package directions. 1 cup of rice per recipe serves 2-3 people. We double this for our little family of four.
2. Melt butter in a medium saucepan over medium heat. While it melts, measure out flour and seasonings into a small bowl. Add to melted butter, whisk together and let cook for a minute until smooth and bubbly.
3. Slowly add milk and whisk together assuring their are no lumps. Bring to a simmer, then remove from heat and allow to thicken stirring occasionally to keep from burning or solidifying on top layer.
4. To serve, scoop select toppings on rice (see ideas below), then pour curry sauce over and enjoy.

Build Your Own for Groups
This is a meal that works so well for groups. We make multiple cups of rice (even borrow a rice cooker or two to accommodate large groups like at our wedding). The curry is made in a large pot (but will take longer to cook and thicken). Then toppings are laid out in bowls with spoons for people to add their own. Definitely a crowd-pleaser.
