There is a lot to fit into my wrap-up post for this month, so I thought I would start now and spread it out a little. Part of my March resolution was to try new vegan recipes that I've pinned, along with others from cookbooks checked out from the library. We've discovered several that will be added to our regular rotation, and even a couple that weren't so great. But, hey, at least it fed us! And with options a little different than our norm. Perhaps some of these would help in your own meal-planning, because they're good whether you're vegan or not!
{Vegan Recipes We've Tried}
With just 1 1/2 weeks left in Meal Management March, here are some of the recipes we've tried so far this month...
{CHOCOLATE CUPCAKES WITH PEANUT BUTTER FROSTING} from Vegan Cupcakes Take Over the World
Okay, so these weren't exactly made this month. I made these February 27th for Daniel's birthday. The last sugar binge before jumping into a month of going vegan, not eating out and limited sugar. They are delicious! Not exactly healthy, but you'd never guess that there's no milk and no eggs. Perfect option for a celebration.

Delicious! And super easy and quick. Got the enthusiastic approval of family members that have no desire to be vegan and that's great in my book.

These were not a hit for us. The seasonings were... just not right. Then, we realized, we're probably looking for something other than a black bean burger.
{TOFU SAAG WITH BROWN RICE} from Skinny Bitch
As I was cooking this I realized the strong cumin flavor was not something my kids would eat. So I added in some curry powder and tried making it more like the curry sauce they love. It worked enough to get Brylee to (reluctantly) eat hers, though Ian seemed to love it. I think some sort of spinach curry sauce should be on my list of recipes to find.
{VEGAN BROCCOLI "CHEESE" SOUP} from kidsfamiliesplanet
A broccoli soup with potatoes and cashews for creaminess. I really enjoyed it. Daniel thought it was okay, but he's not much of a soup fan. And after the first bite, the kids wouldn't touch it. I love broccoli soup and am determined to find one that my family will enjoy with me. Apparently this recipe wasn't it. There's one with coconut milk that I've pinned to try. We'll see how that goes.

{5 MINUTE TOMATO SAUCE} from 101 Cookbooks
So quick and easy and relatively tastey. It's deliciously perfect on pita pizzas, although it's a little simple if used over plain noodles.
{COCONUT BANANA FRENCH TOAST} from Skinny Bitch
I don't know what I did wrong, but this was not good. I ended up drenching them in syrup so that they were a little more edible. They were difficult to cook--a little too slimy. Maybe someone else can make them better, but we won't be trying these again.
{VEGAN ENCHILADAS WITH CILANTRO AVOCADO CREAM SAUCE} from Oh She Glows
These enchiladas are amazing! That's why I wrote a whole blog post about them. We will definitely be making these again.

{WHOLE WHEAT BLUEBERRY BREAKFAST MUFFINS} from Oh She Glows
I wanted something lighter than what was planned for supper and I was in the mood to bake, so I whipped up some of these healthy treats. They were delicious! Not your average sugar- and fat-overloaded muffins, but still really tastey. They were the perfect accompaniment to our smoothies and popcorn, and would be great for a weekend breakfast or special brunch.

Sweet and salty. Different. Our fun St. Patty's dish. But a little "off." I couldn't find sweet white miso (or any miso for that matter), so after looking up alternatives we added agave and salt. Perhaps following the recipe would have given a better end result. The arugula and pistachio's are a fun change to the pesto I'm used to. Will need to try again when I can find all of the proper ingredients.
{AVOCADO PUDDING} from The Vegan Stoner
This was a sweet banana pudding that was great topped with our freshly homemade granola. Brylee didn't finish hers, but Ian gladly ate it up. It is a little "different," but we enjoyed it as a nice healthier alternative to other dessert options.

I hear falafels are difficult to make. But maybe baking it is a little easier? I hope so. We're trying this recipe out this week. And leaving out the feta.

This recipe calls for that mysterious miso again. I wonder if I can find a better alternative? Or, considering this recipe has plenty of other flavor sources, maybe just leave it out? Or maybe I'll find another recipe. But we are trying vegan mac before the month is up.

I love curry, and my son seems to be taking after me. If it can be made simply with a few ingredients, even better.

Between spreading on pitas for lunch and dipping in crackers or carrots for a snack, we've going through a good amount of hummus. That's one thing that could be great homemade.
Hmmm... looks like I better get to cookin' if I'm gonna fit all of this in March!
